Fried Rice and cupcakes

I felt very motivated about this blog for about 20 seconds. Then it all just got too hard when I realised 2 things.

1. I never cook using a recipe.

2. Lactose free alone isn't good enough.

I spent today studying - working hard (hardly working?) but I started feeling really productive when I ditched the books and started making banana cupcakes. Completely lactose free and easy as pie to make. Actually, easier to make than pie. Even better!

I start by mashing up a banana in a mixing bowl, then add in:
1 egg
half a cup of sugar
1 teaspoon of vanilla
about a tablespoon of melted butter
1-2 tablespoons water

Whisk that all together and add in 2 teaspoons of baking powder and 1 cup of plain flour. You could also add in either sultanas or choc chips at this point, but sultanas are yucky and if I had any choc chips, they'd never make it to the cupcakes ;)

Once it's all mixed through, spoon the mixture into your patty pans and cook at 180c for 30 minutes or until gold and lovely on top. Don't get impatient and turn your oven up right near the end, because you will burn the bottoms of your cupcakes.

The icing is just butter (dairy free table spread, no one uses real butter these days)
Icing sugar
1 teaspoon vanilla
lemon juice to taste

Mix it all up and then slap it on top!


They look a bit boring, but they taste awesome.
